Egg size conversions

Find out how much an egg weighs by size, and how many medium, extra large or jumbo eggs replace the large eggs in a recipe. Most recipes mean large eggs, which are about 50 g without the shell.

Egg weight by size

These are the USDA size classes. Each class is defined by the minimum weight of a dozen eggs in the shell, so single eggs vary.

SizeMinimum per dozenMinimum per egg, in shell
Jumbo30 oz70.9 g
Extra large27 oz63.8 g

A large egg splits into about 34 g of white and 15 g of yolk on average, so you can use these amounts when a recipe asks for just a white or a yolk.

Where these numbers come from

Size classes are the USDA minimums per dozen, with the per-egg figure worked out by dividing by 12. Average shelled weights come from 177 Milk Street, and the white and yolk averages from America’s Test Kitchen. Real eggs vary, so for baking where accuracy matters, weigh them.
